I’ve made this chocolate chess pie twice since the COVID-19 lockdown started in Ontario. And I’m planning to make it again this weekend.

Chess pie is a classic Southern US dessert with a custard-like filling. This chocolate chess pie has a filling that’s somewhere between a custard and a brownie… like a very gooey brownie in pie pastry with a bit of a top crust. Very satisfying without being too rich.

This recipe uses cocoa and a bit of instant espresso (or instant coffee). It’s a very simple recipe with ingredient that many of us have on-hand in our pantry. And beyond making and blind-baking the pastry, the filling just gets whisked together, poured into the pastry and baked until set.

Plan ahead because the filling needs a couple hours to chill and set before serving.
