Uovo sbattuto con caffè literally means beaten egg with coffee. It’s an old Italian breakfast comfort food.

The base uovo sbattuto is simply egg yolks and white sugar whisked vigorously until thick and creamy. The result is surprisingly not eggy, but rich and decadent.

If you add a sweet wine like Marsala, you get zabaglione, a light custard-like dessert. It’s delicious served over fresh berries.

If you add espresso or strong coffee, you get uovo sbattuto con caffè.

You can tailor the proportions to your suit your preferences… more sugar if you like it sweeter, or less sugar if you like it creamier.

Recipe for uovo sbattuto con caffè

Makes 1 generous serving or 2 small servings. Recipe can be easily doubled or tripled.

  • 2 egg yolks
  • 2-4 Tbsp granulated sugar
  • 2 oz espresso or strong coffee

Directions

  1. Whisk the egg yolks and sugar vigorously until thick and the sugar is dissolved.
  2. Pour into a glass or mug.
  3. Pour espresso over the egg mixture and serve.

    It’s delicious.
    I might not sleep tonight, but I have no regrets.
    Best served as hot as you can get it. I increased the coffee ratio a bit because I felt unsteady about the eggs, but it probably didn’t need it. Full sugar. Mmm…
